Strawberry & White Chocolate Cake

Ever since I was a little girl, I have been passionate about baking. I would always spend my weekend baking with my grandparents and even now, it is something that we enjoy doing together. If I am baking something I have made a million times before, I tend to make up the recipe as I go along. I love experimenting and trying new recipes whenever I bake (unless it all goes wrong, then it's no fun!) 

Baking is something that I really enjoy and it helps me whenever I'm feeling anxious or worried about something. It is a great skill to have and always remember that patience is the key and practice eventually makes perfect. 

I recently made a beautiful three tier, strawberry and white chocolate cake. It was a huge success and once I had shown my family, it had all gone within the first couple of days!

You Will Need:

3 x 21cm round cake tins

Ingredients:
(Cake)
330g unsalted butter, softened
330g golden caster sugar
4 eggs
330g self-raising flour
1 teaspoon baking powder
1 teaspoon vanilla extract
splash of milk

(icing)
200g white chocolate
250g salted butter, softened
600g sifted icing sugar

(decoration)
400g strawberries




Method:

Preheat your oven to 180c
In a bowl, cream together the butter and sugar until light and fluffy. Mix in the eggs, then add the flour, baking powder, vanilla and a small splash of milk to form a smooth batter.
Divide between the three tins and bake for 18-20 minutes. Leave to cool completely.
To make the icing, melt the white chocolate in a bowl set over a pan of simmering water, making sure the bottom of the bowl isn’t touching the water. In another bowl, whisk the butter and icing sugar well until smooth and light, then add the melted chocolate and stir until well combined. Layer the cakes together with the icing and strawberries, then spread some icing on the top then decorate with more strawberries!



Usually, I'd bake something like this during the spring/summer time. It's quite fresh and fruity, but the white chocolate buttercream definitely balances it out. It's a lovely treat and I'd highly recommend with a cup of tea:-)

Don't ever be afraid to bake and try a new recipe. I find that it always helps me to relax and I love treating my family to something every now and then. This recipe is super easy to follow and the finished result is quite spectacular.
